Strawberry Avocado Salad

Great as either a side dish or a light lunch!

Ingredients
  

  • 1 cup spinach
  • 4 strawberries (sliced)
  • ½ avocado (sliced)
  • 1 tbsp pumpkin seeds (pepitas)
  • 1 tbsp dried cranberries
  • 1 tsp goat cheese crumbles (optional, omit to make vegan)
  • 1 tsp blackberry balsamic glaze (or regular balsamic glaze)

Equipment

  • 1 knife
  • 1 bowl

Method
 

  1. Put the spinach into your salad bowl or personal bowl.
  2. Slice the strawberries. It works best to slice ~3 times one way and once perpendicular to the first 3 slices.
  3. Slice the avocado, then peel it using the back of a spoon or the back of your thumb.
  4. Place the strawberries and avocado on top of the spinach.
  5. Sprinkle the pumpkin seeds, goat cheese crumbles (optional), and dried cranberries on top of the salad.
  6. Lastly, drizzle the blackberry balsamic glaze over everything to finish.
